Meaty Spinach Manicotti
The recipe for the manicotti I described the other day:
2 packs manicotti shells
1/4 c flour
3/4 c grated parmesan
4 c diced cooked chicken
2 packs frozen chopped spinach, thawed and drained
1/4 c butter
2 1/2 c milk
1 lb bulk sausage
2 eggs beaten
1 cup shredded mozzarella
1/4 c minced fresh parsley
2 - 26oz cans spaghetti sauce
Cook manicotti according to package. Melt butter in saucepan, stirn in the flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in Parmesan cheese until melted; set aside. In a skillet, cook the sausage until no longer pink; drain. Add the chicken, spinach, eggs, mozzarella and 3/4 cup of the white sauce made above. Stuff into manicotti shells. Spread 1/2 c spaghetti sauce into two ungreased 13x9 baking dishes. Top with manicotti. Pour remaining spaghetti sauce over the top. Reheat the remaining white sauce, stirring constantly. Pour over spaghetti sauce. Bake, uncovered, at 350 for 45-50 minutes. Sprinkle with parsley.
